Rainbow Poke Cupcakes

 

Rainbow Poke Cupcakes are simply regular poke cake as cupcakes dressed up for anything that is a rainbow theme. They remind me of my Key Lime in jar cakes that I made last year.

Use Air Heads Extremes to make the rainbow and homemade frosting!

Poke Cake ingredients Just one tip would be to use 2 cupcake wrappers. One that you bake and make them in, then when you want to display them, add a decorative wrapper to dress it up a bit!

Ingredients
  • INGREDIENTS
  • 1 box White Cake Mix
  • 1 cup Water
  • ⅓ cup Vegetable Oil
  • 3 Eggs
  • 3 oz Lime Gelatin
  • 1 cup boiling Water
  • ½ cup cold water
  • AirHeads Extremes
  • 2 tbsp Milk
  • 1 cup softened Butter
  • 4 cup Powdered Sugar
  • Green Food Coloring

Instructions
  1. DIRECTIONS
  2. Make cupcakes according to box directions
  3. After baking move to wire rack to cool completely.
  4. Poke holes in each cupcake
  5. Mix Jello and boiling water stir until dissolved.
  6. Add ½ cup cold water and pour over cupcakes.
  7. Refrigerate for at least 15 minutes.
  8. In a large bowl, cream the butter.
  9. Beat in the milk mixing until fluffy.
  10. Transfer ¼ of the icing to the corner of medium size zipper bag, try to minimize trapped air and close. Clip a small piece off the corner to pipe. Set aside.
  11. Add several drops of green food coloring to remaining icing and mix until color is blended.
  12. Transfer icing to the corner of large size zipper bag. Clip a small piece off the corner to pipe.
  13. Cut each strip of the airheads into 2½ – 3 inch lengths.
  14. Ice the top of each cupcake with green icing.
  15. Pipe a white cloud on each side of the green and insert the airheads strip between them to make a rainbow.
